This recipe makes four Veggie / Cheese burgers but I can never get them to stick together so I make one large burger in a casserole dish in the oven.
I tbs. oil
1 small onion or 1/2 a leek (chopped)
1tbs. curry powder
4 button mushrooms (chopped)
1 x 15oz. can of Red Kidney beans (drained,rinsed and mashed with a potato masher)
2 tbs. fresh flat leaf parsley
1 carrot (grated)
100gr. of Pilgrims Choice Famhouse Cheese (I had a 50g leftover piece if Red Leicester which needed using up so I used that and 50g of Pilgrim’s Choice)
Cook the onion in the heated oil for 5 minutes, add the carrot and mushroom and cook for 5 minutes. stir in the curry powder and the beans cheese and herbs and remove from the heat.
If you want 4 small burger divide and make into pattie shapes and roll in a little seasoned flour. Cook for 4-5 minutes on each side under a medium grill.
Put into a casserole or pie dish and stick in a medium oven for about 1/2 hour
These are spicy and hot – perfect for Bonfire Night!
I have now made 3 meals with my block of Pilgrim’s Choice and I have aprox. 193 gr. left!
